Thanks to an ingenious way of preparing cauliflower, fitness enthusiasts now have low carb, protein-packed mashed potatoes as an alternative to kale salad. There’s nothing better than the look and taste of mashed potatoes without all the starchy carbs!
2 C Cooked Cauliflower
2/3 C Liquid Egg Whites
1 TBS Pea Protein
1 TBS Garlic Powder
1 TBS Chives
1 tsp Parsley
Salt & Pepper to taste
I Cant Believe Its Not Butter Spray (optional)
Combine all ingredients in a food processor and process until smooth and creamy. Place in a microwave safe dish and microwave for 1-2 minutes, stirring mixture half way through. Top with a little I Cant Believe Its Not Butter spray and extra parsley and chives.
